Our apple trees were just loaded with apples this year.
So far, I have bagged and frozen 85 bags of applesauce,
given away 25 gallons of apples,
stored apples in the basement for fresh winter eating,
and eaten more than my share of fresh apples and apple dessert!
Yesterday, I had another five gallon bucket full of apples
so I decided to make some preserves.
I started out by making two batches of this apple pie jam.
I follow the directions except the butter. I leave that out.
Then, I moved on to red hot apple jelly.
The recipe calls for apple juice.
I boil the apple peelings to make my apple juice for this jelly.
It turns out so pretty and has a delightful flavor,
especially good around the holidays.
Even after all of that cooking, I still had apples left in my bucket
so I sliced and froze 7 bags of sliced apples.
They are great to use to make fried apples!
Even after all that, I still have more apples to give away!
It is wonderful to have a bountiful harvest!
